Tuna Salad Toasties

These tuna salad toasties are the perfect hand-held food for kids of all ages, and even more so because kids can make these themselves! High in fiber and protein, these sandwich pockets are certainly an upgrade from the past’s lumpy, squishy, and wet ol’ tuna sandwiches. In all honesty, the basic ingredients have stayed the same...but presentation and delivery can make the biggest difference! PRO TIP: these sandwich pockets can be made with so many different fillings! Next time you try this, experiment with different flavor combos like tomato & cheese, ham & cheese, and Nutella & bananas!

Ingredients: (2 servings)

4 slices whole-wheat bread

1 packet tuna salad

½ - 1 can assorted boiled veggies (Del Monte, Green Giant, etc.)

OPTIONAL: ¼ cup dried cranberries

2 slices cheese of choice

Ketchup and/or mayonnaise

Step one:

Combine one packet of tuna salad, as much of the boiled veggies you prefer, and optionally ¼ cup of dried cranberries in a bowl. Mix so everything is thoroughly combined and forms one thick paste. You can use a drop of ketchup or mayonnaise to bind everything together.

Step two:

Lay two pieces of whole wheat bread onto a serving or preparation vessel (plate or cutting board). Try not to use cold bread, or else it will crack easily. Spread a dab of mayonnaise and/or ketchup onto the surface of one slice, making sure you leave a little gap around the edges. Then, lay half a slice of cheese onto the bread, once again being mindful to keep a perimeter of bread around the filling.

Step three:

Dollop a tablespoon of the tuna salad mixture onto the bread and spread it evenly. Finish it off with the other half of your sliced cheese. Brush the edges of the bread with a little water and lay on the other slice of bread. Press the crusts of the bread together, using a fork to further crimp the edges. Make sure it is sealed tightly and that the fillings don’t overflow!

Step four:

Repeat steps two and three with the remaining slices of bread and tuna filling.

Step five:

Pop your tuna toasties into a toaster and let them cook for 1-2 minutes, or until nicely browned. Enjoy the toasties!
